We use the whole orange in this recipe, creating a marmalade that's more bitter, more tangy, and packed with juicy Seville peel. The oranges are slowly baked to develop their complex flavour, then sliced by hand and gently cooked in large copper pans with just unrefined sugar, lemons, and a touch of honey.
