Robust flavour with notes of burnt toffee and rich maple

For a brief moment each year, between the last breath of winter and the first signs of spring, nature creates something extraordinary. When the nights remain crisp and freezing, yet the days climb above zero, the sap begins to rise. The maple trees awaken and prepare to bud. This is the start of maple syrup season, sometimes lasting only ten days, rarely more than three weeks.

We collect the sap at its peak and slowly reduce it over a traditional wood fire. It takes 40 litres of pure sap to produce just 1 litre of maple syrup. Nothing is added. Nothing is taken away except water.

A Syrup That Evolves with the Season

The first runs of sap create a beautifully light syrup delicate, smooth and creamy. As the season progresses, the colour deepens to warm amber and, in some years, to a rich dark hue. With this change in colour comes a transformation in flavour:

  • Early season: light, creamy, subtly sweet
  • Mid-season: golden amber with caramel warmth
  • Late season: darker, fuller-bodied, with notes of toffee and deep maple richness

Each bottle captures a fleeting moment in the season, shaped by temperature, timing, and tradition.
